El chef Pablo Salas es un apasionado de la gastronomía del Estado de México, y su recetario se basa en la tarea de salvaguardar la cultura gastronómica mexicana a través de las recetas que elabora en su recién renovado y exquisito restaurante de Toluca. Amaranta es un espacio dedicado a la cocina mexiquense contemporánea que cuenta con una variedad impresionante de ingredientes locales aplicados a recetas tradicionales modificadas en sus texturas y presentaciones: vegetales, hongos, pescados de río y especialmente el cerdo al que dedica unas jornadas tituladas `Homenaje al Honorable Puerco´. “La cocina mexiquense incluye al cerdo desde que llegaron los españoles con sus despensas vivientes, y a veces noto que se desaprovechan muchas posibilidades cuando, definitivamente, la carne de cerdo es tan importante dentro de la gastronomía del mundo que llega a crear controversia”.
También sus sutiles escabeches son marca de su cocina, respetando y potenciando con ellos los sabores naturales de las setas o el conejo. Su día a día se ve envuelto en un ambiente familiar. “Ellos son mi respaldo absoluto, desinteresado, honesto. Mi hermano maneja los vinos de Amaranta y apoya a mi padre en el salón, que además lleva las compras, la administración y las inversiones; y mi madre es la parte administrativa. Soy afortunado.”
El chef de los tatuajes nació y creció en Toluca, y aunque estudió en otras cocinas decidió “replicar, reinventar y enaltecer la cocina de mi tierra, la cocina mexiquense”, dice Salas. Amaranta es un lugar imprescindible en la bitácora de los devotos a la mejor gastronomía, y los días 26, 27 y 28 de enero se podrá vivir la experiencia en directo en Estudio Millesime Panamá.
